Sweet potato with cottage cheese, spring onion and radish

Sweet potatoes are becoming increasingly popular, which does not surprise me at all since they are just so incredibly tasty. When I found this super easy Princess Misia dish, I could not but try it. And boy, how much I liked it.

Ingredients (4 portions)

  • 4 large sweet potatoes
  • 5 radishes
  • 2 spring onions
  • 200 g cottage cheese
  • Mixed sprouts (optional)
  • Salt (to taste)


  1. You can cook the sweet potatoes either in an oven or you can use a microwave.
    • If you use an oven:
      • Preheat oven to 200 degrees.
      • With a fork, pierce the sweet potato skin 5 to 6 times.
      • Place on a baking sheet lined with foil and bake until tender (45 minutes to 1 hour -best to check by piercing the potatoes);
    • If you use a microwave: put in microwave for ca 9-11 min at 1000 watt.
  2. Cut radish and spring onion into small pieces;
  3. Combine cottage cheese, spring onion, radish and add some salt to taste;
  4. When sweet potatoes are ready, cut them open and stuff with the cottage cheese mix;
  5. Garnish with some sprouts.
  6. Enjoy!
