Zucchini pancakes with goats’ cheese

Zucchini pancakes. Admiddetly, this may sound a bit odd. My boyfriend likes to have them as breakfast on the weekend, but I guess that some of you would prefer them for lunch or even as a light dinner to finish a busy day. Anyway, I am 100% sure that you will love them. Be sure to try them and let me know!

I have to admit, this is again a recipe from Princess Misia’s Fourplay book -which means I should really write a blog post on how great her book is any time soon.

Ingredients (4 portions)

  • 1 medium courgette
  • 100 g spelt flour
  • 2 eggs
  • 150-200g fresh goats’ cheese
  • Olive oil or coconut oil
  • Teaspoon salt


  1. Combine spelt flour, eggs and salt to make a batter
  2. Grate zucchini
  3. Gather the zucchini in a clean kitchen towel and squeeze to press out as much moisture from the zucchini as possible.
  4. Add zucchini to batter
  5. Heat oil in a pan
  6. Make small pancakes and fry until golden brown.
  7. Serve with goats’ cheese.
