Banana pancakes

As tomorrow is Sunday, and as I am of the opinion that nothing can beat pancakes for breakfast on a Sunday, I wanted to share with you one of my biggest addictions: banana pancakes.

They turned out the biggest revelations in my healthy life, so I could not but share them with you!

Admittedly, apart from the eggs in the recipe and their looks, there’s not much they have in common with regular pancakes. Apart from the fact that I love them both. And that you can top them with whatever you like :)!

In the meantime, I’ve tried quite some variants of the famous banana pancake. Let me share with you two of them.

Basic 2-ingredient banana pancakes

This is for sure the simplest version of banana pancakes you can find. It’s simple: you just need a banana and 2 eggs. And you can add whatever nice extra you want (some milk, cocoa powder, honey, nuts, fruits etc.).

The most tricky part is probably getting them shaped as a nice pancake.

Ingredients (serves 1)

  • 1 medium ripe banana
  • 2 large eggs

Method

  1. Cut the banana into pieces, add the eggs and then use a stick blender to get a perfect pancake batter (if you do not own a stick blender, just mash the bananas until they have a pudding-like consistency, then add the eggs)
  2. In fact, you can add other ingredients (such as cocoa powder, honey etc. )
  3. Heat some coconut oil over medium heat
  4. Cook your pancakes: cook until golden brown and then flip. Be careful, these pancakes are rather difficult to flip, therefore be sure to keep them small!
  5. If you want, you can sprinkle your pancakes with some toppings (e.g. nuts, fruits,…)

Protein banana pancakes

This recipe will please the sporty spices amongst you. Myself, I’m kind of getting addicted to these babies (no kidding) and often cave to make these after my workout.

In fact, they’re very similar to the above recipe, but you just add some protein powder and a dash of milk.

Ingredients

  • 1 medium ripe banana
  • 2 large eggs
  • 1 scoop protein powder (I prefer vanilla or banana protein powder)
  • dash of milk (myself, I use soy milk or cottage cheese)

Method

  1. Cut the banana into pieces, add the eggs, milk and protein powder and then use a stick blender to get a perfect pancake batter (if you do not own a stick blender, just mash the bananas until they have a pudding-like consistency, then add the eggs)
  2. Again, you can add other ingredients (such as cocoa powder, honey etc.), but they are perfect without!
