Toast, mushrooms, chili and a poached egg

This is one of those recipes that I really like for breakfast on Sunday. Or for lunch. Or as a light dinner. Always easy. Always tasty.


All you need is:

  • some bread
  • fresh eggs
  • a splash of vinegar
  • mushrooms
  • 1 red chili pepper
  • 1 (yellow or red) onion
  • 1 clove of garlic
  • olive oil

And take the following steps:

1. Toast bread (either with a toaster of in a conventional oven);

2. Heat the olive oil over medium heat in a saucepan. Add onions  and garlic and cook until translucent. Then add mushrooms and chili pepper;

3. Put water to boil, add a splash of vinegar and poach egg for ca. 3-4 minutes (some tips on how to make a perfect poached egg via this link).

And just enjoy your delicious toast. The perfect start of a day.
